I just made a great treat for after dinner. So I thought I'd share. First, what are Eierkoeken? This page gives you a picture and an explanation. They are flat cakey-cookies, soft and sweet. You can make them with this recipe. I am lucky enough to be able to buy them in the supermarket Get an eierkoek, spread some soft cream cheese on the flat side, or some whipped cream, or even butter if you dont have any cheese or cream. Slice up a few strawberries and place them on the top. You can also add some syrup of your choice, but that would be very very sweet. Eierkoeken are supposedly easy to make, and low in calories. Kinda. Of course, the more you spread on top, the more calories, but still...

no oats, rye, or barley too. XD lol severely limited diet stupid gluten intolerance...
monday i get to make bread for the first time... gluten free bread at that its going to be weird
